Crunchy Smoked Vegetables

- 1 onion sweet
- 1 head broccoli
- ½ head cauliflower
- 2 bell peppers
- 8 oz mushrooms
- 2 tablespoon olive oil
- 2 teaspoon garlic powder
- 2 teaspoon salt separated
- 1 teaspoon black pepper
Place grill basket in smoker and pre-heat smoker to 225°F.
Slice vegetables into bite size pieces, about 1" square
Place in bowl and drizzle with olive oil, pepper, and 1 teaspoon of salt. Mix to evenly cover vegetables.
Once pre-heated, place vegetables in the grill basket and smoke for 1 hour.
After 1 hour, turn the temperature up to 400°F and cook for another 30-45 minutes until crispy. Remove from smoker and place in a serving dish.
- Salt the vegetables after serving for best flavor
- Make sure the mushrooms are fresh. If they feel slimey, they aren't good anymore
- Use several different colored peppers to make these bright and fun
