Crunchy Smoked Vegetables

Crunchy, healthy, and full of great flavor; these vegetables are fantastic. Quit making boring veggies and make something everyone will want to eat.

Ingredients

  • 1 onion sweet
  • 1 head broccoli
  • ½ head cauliflower
  • 2 bell peppers
  • 8 oz mushrooms
  • 2 tablespoon olive oil
  • 2 teaspoon garlic powder
  • 2 teaspoon salt separated
  • 1 teaspoon black pepper

Instructions

  • Place grill basket in smoker and pre-heat smoker to 225°F.
  • Slice vegetables into bite size pieces, about 1" square
  • Place in bowl and drizzle with olive oil, pepper, and 1 teaspoon of salt. Mix to evenly cover vegetables.
  • Once pre-heated, place vegetables in the grill basket and smoke for 1 hour.
  • After 1 hour, turn the temperature up to 400°F and cook for another 30-45 minutes until crispy. Remove from smoker and place in a serving dish.

Notes

  • Salt the vegetables after serving for best flavor
  • Make sure the mushrooms are fresh. If they feel slimey, they aren't good anymore
  • Use several different colored peppers to make these bright and fun
