Smoked Baked Beans Recipe (with Bacon)

These smoked baked beans are easy to make on your smoker and are packed full of flavor. Did I mention they're topped with delicious bacon?!

Ingredients

  • ½ lb bacon thick cut
  • 1 sweet onion diced
  • 1 green pepper diced
  • 54 oz pork and beans canned
  • cup brown sugar
  • ½ cup ketchup
  • ¼ cup apple cider vinegar
  • 3 tablespoon molasses
  • 1 tablespoon mustard powder or brown mustard

Instructions

  • Place 12" cast iron pan into smoker and pre-heat to 425°F.
  • Once the pan is hot, cook the bacon in the cast iron pan. Take out of the pan a couple minutes before it's crispy. Let cool and crumble into 1" pieces, set aside.
  • Cook diced onions and peppers in bacon fat until translucent, about 5 minutes. Then turn off the smoker (if using a pellet smoker) Lower temperature if using an offset smoker.
  • Add the rest of ingredients to the sauteed onions and peppers and mix well. Top with the crumbled bacon.
  • Turn smoker back on and maintain 250°F. Smoke beans for 45 minutes. Remove pan using a pot holder or towel (pan will be HOT). Enjoy!

Notes

  • Make sure to not cook the bacon all the way before topping the beans, otherwise it will become burnt
  • Apple or cherry works best with beans
  • Garnish with parsley or cilantro to put a little color into the beans
