Smoked Baked Beans with Bacon

I love making these baked beans from start to finish in my smoker. The smoked bacon is the best way bacon can be cooked. Then cooking the onion and peppers in the bacon fat.

– Bacon – Sweet onion – Green pepper – Pork and beans – Brown sugar – Ketchup – Apple cider vinegar – Molasses – Mustard powder

Pellet Smoker

Cast Iron Pan

Place 12" cast iron pan into smoker and pre-heat to 425°F. Once the pan is hot, cook the bacon in the cast iron pan. Take out of the pan a couple minutes before it's crispy.

Cook diced onions and peppers in bacon fat until translucent, about 5 minutes. Then turn off the smoker (if using a pellet smoker) Lower temperature if using an offset smoker.

Add the rest of ingredients to the sauteed onions and peppers and mix well. Top with the crumbled bacon.

Turn smoker back on and maintain 250°F. Smoke beans for 45 minutes. Remove pan using a pot holder or towel . Enjoy!
