I love grilling and smoking steaks. Whether it be a grilled T-Bone steak or my grilled Ribeye, you can never go wrong with a great cut of beef for dinner. These grilled filet mignon steaks are no different.
Extraordinarily tender when cooked medium rare, these grilled filet mignon steaks gives a great flavor that pairs perfectly with smoked potatoes and buttery smoked corn on the cob.

What is Filet Mignon?
Filet mignon is a cut of beef that is from the tip of the tenderloin of a cow. The tenderloin is a very tender piece of beef that has minimal marbling of fat or muscle.

Cut from the tip of the tenderloin where a more deep flavor is present, makes the filet mignon a very desirable yet more expensive cut of meat.
Purchased in either USDA Prime or USDA Choice this will be a tender cut. However, a prime cut of meat will have the most flavor and tenderness.
Ingredients
This filet mignon recipe is meant to remain simple and let the flavor of the meat shine through. These seasoning are simply to enhance the flavor, not over power it!

- Sea Salt
- Black Pepper (freshly cracked)
- Garlic Powder
- Smoked Paprika

Instructions

- Step 1: Remove steak from packaging and allow to warm to room temperature.

- Step 2: Pre-heat grill to 400-450°F. Clean grill grate with grill brush or onion.

- Step 3: Season steak lightly on top, bottom, and sides making sure not to overdo the salt. Since every side of the steak is seasoned, it won't take much seasoning per side. Do NOT over salt this steak!

- Step 4: Place steak on the grill grate over direct heat and cook 6 minutes without moving it to give a good sear. Flip over and cook roughly another 6 minutes or until the Internal Temperature is 120-125°F.

- Step 5: Remove steak from grill once 120-125°F IT is reached and allow to rest 5-10 minutes on cutting board.

- Step 6: Serve steak with whole, not sliced, with your favorite side dishes. Top the steak with a little butter for even more flavor!
Hint: Make sure to clean the grill before cooking to remove any leftover food on grill grates. I like to use this barbecue cleaning brush (affiliate link) for cleaning the grill.
How Long to Cook the Steak
As with any meat, it's best to cook to an Internal Temperature, NOT by time. When the steak is first put on the grill, cook for about 6 minutes WITHOUT moving the steak.
Flip and grill the opposite side of the steak. Start checking the temperature with an instant read thermometer after about 5 minutes. Cook to your desired internal temp.
Hint: The steak will keep rising in temperature 5-10 degrees fahrenheit after you remove from the barbecue grill. So keep that in mind when checking the temp.

I recommend a rare to medium-rare steak finish for grilled filet mignon. This is NOT a steak you want to overcook, making it tough.

The Weber Gas Grill is what I used when preparing these grilled filet mignon steaks. I LOVE this grill. It heats up really fast and evenly distributes the heat throughout the grill.

However, the best grill is the one you already have. Fire up your pellet grill, smoker, or charcoal grill and cook this filet mignon recipe!

Storage & Reheating
Store for up to 3 days in an airtight container in the fridge. It probably won't last that long though.
To reheat, preheat a toaster oven or oven at 300°F. Slice the steak into ¼" - ½" strips and place on a foil lined tray. Cook for 10 minutes until the steak is warm throughout.
Top tip
Cook at a high heat of 400-450°F for a nice char and pink center. Filet Mignon steak has a lot of marbling, but not fat on the outside of the meat allowing for a high heat cook. A non fatty exterior prevents the grill from flaring up and overcooking the outside of the steak at high heat.

Filet mignon will take about 10-12 minutes to cook to medium rare at a grill temperature of 400°F. However, always cook to an internal temperature checked by meat thermometer. NOT by time.
Yes, the high marbling of fat in the meat makes this one of the most tender cuts of steak.
I do NOT like marinating this cut of meat. It has incredible flavor. Don't ruin it by adding too much seasoning or marinade. A simple salt, pepper, garlic, paprika dusting will enhance the steaks flavor giving you the best results.

These are my favorite dishes to serve with grilled filet mignon:

Ingredients
Steak
- 24 oz Filet Mignon steak (4 Steaks - 6 oz each)
Seasoning
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Instructions
- Remove steak from refrigerator and allow to warm at room temperature on kitchen counter for 30-60 minutes.
- Season steak on ALL sides with dry ingredients. Don't over season. Due to EVERY side being covered in seasoning, a little dusting of seasoning will be best.
- Pre-heat grill to 400-450°F and clean the grill with a brush and raw onion if desired.
- Place the steak on grill grate over direct heat, close grill lid, and cook for 6 minutes. Flip the steak and cook another 4-6 minutes on the other side with the lid closed.
- Check the internal temperature of the steak with a meat thermometer and continue cooking until the steak reaches 5-10°F LESS than your finished desired temperature. I recommend Medium Rare for filet mignon.

- Remove the steak from the grill 10°F LESS than your finished temp and allow to rest for 5-10 minutes before serving.

Pro Tips
- Clean the grill with a raw onion cut in half to prevent past grilled residue from sticking to the steak.
- Check propane levels before starting grilling if using a propane grill so you don't run out. I hate when that happens...
- Use an instant-read thermometer to tell when the steak is finished cooking. Cook to temperature, NOT a specific time.
- Allow to rest at room temperature for 5-10 minutes to allow the juices to redistribute within the meat before serving.
